Just moved to Canada 3 years ago from North Carolina and wondered the same thing this year. So I wikipedia-ed it (don't knock my new verb).
Apparently back in the day - like WAY back in the day, employers were brought gifts from employees (lords and serfs) on the day after Christmas (maybe re-gifting from the day before?)and they used to call these gifts 'Christmas boxes' (shortened to boxes later, I guess. And who said Southerners were the only lazy ones?) So the day was coined BOXING DAY, which makes no sense to me, because now employees have the day off so employers get nothing.
